These beauties are banana protein muffins. They're the ultimate healthy, gluten-free, vegan protein muffins and they pack a serious protein punch. Superfood bananas are packed with vitamins and minerals which have a wealth of benefits for the mind and the body.
These little muffins are perfect to take out with you on the bike, snack on after a training session and are easy to make. The oat flour is used for fiber, whilst the protein powder gives them a powerful boost.
🍌 4 small bananas (370g)
🍌 2 tbsp coconut sugar
🍌 1½ Tsp cinnamon
🍌 1 tsp baking powder
🍌 ½ Tsp baking soda
🍌 1 ½ tbsp oat flour
🍌 ½ Tsp gluten-free flour
🍌 3 scoops + 1 tbsp Sun Pyramid Health Protein Powder
🍌 Preheat oven to 350 degrees.
🍌 Mash bananas in a bowl and add in the coconut palm sugar.
🍌 In another bowl, add the flour, baking powder, baking soda, protein powder, cinnamon, and mix well to combine.
🍌 Add the wet banana mixture to the flour mixture and fold in until all is well combined. Do not overmix. Set the batter aside for 2-3 minutes to "fluff up".
🍌 Grease a muffin tray using coconut oil.
🍌 Fill the muffin cups in the greased muffin tray ¾ full of the muffin batter.
🍌 Bake the muffins in the oven for 12-15 minutes or until a toothpick pulls clean.
🍌 Set aside to cool.
Once cooled, you can slather with almond butter, enjoy!
