GF Pancakes with Homemade Berry Jam
Pancakes are just delicious, it´s almost like having dessert for breakfast! These easy vegan pancakes are my favorite basic pancakes! Who knew that eggless, oat flour pancakes could be so fluffy? These beauties are packed with almost as many nutrients and vitamins as they have flavor. They are rich, healthy, quick to make and simply delicious.

Ingredients:
🍓½ cup buckwheat flour.
🍓1 cup oat flour.
🍓½ ripe banana.
🍓1 cup coconut milk.
🍓1 tsp Maca powder.
🍓Dash salt.
🍓½ Tsp lemon zest.
🍓¼Tsp baking powder.
🍓1 Tbsp Sun Pyramid Health´s chia seeds (Mixed with 3 Tbsp of water, let sit for 10 min then mix into the batter).
*Add more oat flour if too thin or more coconut milk if too thick. Makes 12 small pancakes.
For the Jam:
- For the jam mix, 1 cup frozen mixed berries with 1 Tbsp coconut nectar and simmer in small sauce pan over low heat. Let cool down a bit before serving.
- You can also add chia seeds to the jam for an even better consistency without any heat needed!
And that's it! Super easy, quick and healthy.
